Race for the cure 2012

It's coming up again! I can't wait! This year we made a team called ' The Rack Pack '.  I've got my fundraising goal set at $50. race for the cure

Been a while since a post, I know.... but I'm excited today! I just signed up for the Susan G. Komen Race for the Cure!  It is in support of breast cancer awareness and is a big fundraiser. Good recipes

This week I have tried some new recipes that are really good. First I must rave about what I made last night - Roasted Veggie Pasta Bake  I'm trying to go back to our vegetarian-ish way of eating, so I'm always hunting new vegetarian recipes. I was pretty much cooking all vegetarian until a few months ago, my husband wanted to gain weight, so he requested lots of meat. Well, he admits he doesn't feel good at all since going back to eating ' the old way ' , so time to get back over to the veggie side. :o) This will stay in my vegetarian stash from now on. It was absolutely delicious. I've been telling people for the past couple years or so that you don't need meat to have a good meal. No one seems to take me seriously. They don't know what they are missing! I dare you to to go meat free for a week, you will feel better, I'm telling ya!
  Ok, my second new recipe, is Beer Rolls. I found these on the Mr food website, which I just finally checked out and I love it. So many good and easy looking recipes on there! ANYWAY..... these aren't super soft, and fluffy rolls, because you can make them in like 15 minutes. BUT you do get that yeasty taste from the beer. I added a little extra sugar to mine too. :o)  IT was really good with my potato soup.
 So there's a couple of goodies from this week.

Tuesday : Potato Soup, Beer Rolls ( hubby having tooth pulled today, so soup it is! )

Wednesday: Roasted Veggie Pasta Bake, Garlic Bread

Thursday : Roasted Asparagus, Fried Potatoes, Bacon Wrapped Green Beans, Rolls

Friday: Beefy Taco Bake, Avocado Salad

Saturday :  Steaks, Salad, Roasted Garlic Broccoli

Menu Plan Monday 7-11-11


 I was listening to The Splendid Table on NPR today and I was inspired to try to incorporate dishes from different countries into my menu. At first I thought, I'd just have a ' world table ' week and have a different country every night, but I just don't have time to go through and dig for it today. I did manage to incorporate 4 countries into my plan for the week. They are  Ireland, Israel, Singapore, and Cuba. Well, I guess I could throw in Italy too since I'm having lasagna one night. I really wanted it to be a  NEW food experience, so just the 4 are all new recipes I haven't had.

Monday : Hamburgers, chips

Tuesday : Salmon Patties, Macaroni and cheese, Green Beans

Wednesday : Dublin Coddle ( Ireland ), Garlic Bread

Thursday : Lasagna, Bread

Friday : Cuban Sandwiches ( Cuba ), Pasta Salad, Carrot Salad ( Israel )

Saturday : Personal Pizzas, Pisang Goreng ( Singapore )  Don't ask me to pronounce it!

Sunday : Leftovers

A Tiny bit of organizing

OK, so I have had the goal of becoming more organized.  I started with menu planning, and I love that and it's going well. My real goal was to get a grasp on the clutter around here and get to organizing and getting rid of the things that aren't needed.  I made a tiny, TINY, baby step the other day, but even this simple thing felt good! I smile every time I see it.  There is an area where we always have several magazines stacked.   It's Such an eye sore! I would neatly stack them, and a day later they were all messed up and in the way.  Such a pain to clean and sweep around them. ( their home is in the floor ). I finally picked up a little Magazine holder while I was at Walmart doing some shopping. I just decided to stroll down the office supply  aisle to see what they had. There it was ...one of those heavy duty cardboard magazine organizers... covered in a nice blue. :o)  The rest is history... came home, went through the stack and got rid of some of the older issues, then placed the rest in their new home. Tada! Why didn't I do this months ago? The whole room looks better!  A painless and quick baby step.:o)

Late Menu Plan

With the busy weekend we had, I wasn't around the computer to put up my menu plan for the week. I did still have a plan. even though late, I will go a head and post my menu for my week starting on  Tuesday....

Tuesday :   Baked Breaded chicken breast, Macaroni -n Cheese, Corn

Wednesday :  Ribeye Steaks, Fresh picked Green Beans, Grilled AvocadoBlueberry Buckle ( I have blueberries growing in my front yard. YUM! )

Thursday :  Ground Turkey Tacos,  Mexican Rice

Friday : Chicken Soup, Corn Bread

Saturday :  Don Julio's

Sunday :  Sweet Potatoes, Squash, Zucchini, Grilled Chicken Breast.
