First I must rave about what I made last night - <a href="http://d38cc26d.linkbucks.com/">Roasted Veggie Pasta Bake</a> I'm trying to go back to our vegetarian-ish way of eating, so I'm always hunting new vegetarian recipes. I was pretty much cooking all vegetarian until a few months ago, my husband wanted to gain weight, so he requested lots of meat. Well, he admits he doesn't feel good at all since going back to eating ' the old way ' , so time to get back over to the veggie side. :o) This will stay<i> </i>in my vegetarian stash from now on. It was absolutely delicious. I've been telling people for the past couple years or so that you don't need meat to have a good meal. No one seems to take me seriously. They don't know what they are missing! I dare you to to go meat free for a week, you will feel better, I'm telling ya!<br />
Ok, my second new recipe, is <a href="http://www.mrfood.com/Bread/Beer-Rolls-532/ct/1">Beer Rolls</a>. I found these on the <a href="http://909b69a2.linkbucks.com/">Mr food website</a>, which I just finally checked out and I love it. So many good and easy looking recipes on there! ANYWAY..... these aren't super soft, and fluffy rolls, because you can make them in like 15 minutes. BUT you do get that yeasty taste from the beer. I added a little extra sugar to mine too. :o) IT was really good with my potato soup.<br />

</div> I was listening to <a href="http://cb9810b6.tinylinks.co/">The Splendid Table</a> on NPR today and I was inspired to try to incorporate dishes from different countries into my menu. At first I thought, I'd just have a ' world table ' week and have a different country every night, but I just don't have time to go through and dig for it today. I did manage to incorporate 4 countries into my plan for the week. They are Ireland, Israel, Singapore, and Cuba. Well, I guess I could throw in Italy too since I'm having lasagna one night. I really wanted it to be a <i> NEW</i> food experience, so just the 4 are all new recipes I haven't had.<br />

I started with menu planning, and I love that and it's going well. My real goal was to get a grasp on the clutter around here and get to organizing and getting rid of the things that aren't needed. I made a tiny, TINY, baby step the other day, but even this simple thing felt good! I smile every time I see it. There is an area where we always have several magazines stacked. It's Such an eye sore! I would neatly stack them, and a day later they were all messed up and in the way. Such a pain to clean and sweep around them. ( their home is in the floor ). I finally picked up a little Magazine holder while I was at Walmart doing some shopping. I just decided to stroll down the office supply aisle to see what they had. There it was ...one of those heavy duty cardboard magazine organizers... covered in a nice blue. :o) The rest is history... came home, went through the stack and got rid of some of the older issues, then placed the rest in their new home. Tada! Why didn't I do this months ago? The whole room looks better! I have put the sewn one And the just plain ole cut out one through the washer and dryer several times and I have come to the conclusion that the one that is just cut and use is the way to go. It hasn't started getting frayed around the edges or anything. I prefer to use it over my other sewn one with the velcro on the back because I can flip it and use both sides. So far it is awesome! First of all.... I used the <a href="http://89d19e7d.tinylinks.co/">template</a> that had the menu and the grocery list on the same page. It was all so organized, thought out, and right there all laid out in front of me. I haven't done that thing where you get half way into making supper and you realize..... Awwwww MAN! I forgot to buy onion! That happens to me quite often. Not this week! I wasn't buying random stuff that I thought I <i>might</i> need sometime for something. Hopefully this leads to more space in my cabinets. That also translated to a pretty good final bill at checkout. I didn't take the time to go through my coupons that time and I still was very satisfied with my bill. It's been nice knowing exactly what was going to be cooked for supper way ahead of time. I don't have to stand there going through cabinets and the fridge trying to figure out ' What did I buy to cook anyway?" . I don't know if Lee has figured out he can check the menu on the fridge to see what's going to be done when he gets home or not. He'll probably like that too.So anyway , that's my 2 cents. Maybe I'll inspire someone else to try it. :o)<br />

You just can't beat a good ole hot, fresh corn dog! Crispy on the outside and moist on the inside... Mmmmmm! My experience has pretty much consisted of microwaved or baked ones until today. I was inspired by the famous ' corny dog ' from the <a href="http://0a6eb417.tinylinks.co/">Texas State Fair</a>. I really want to go someday, so I was reading about all the delicious, southern fried EVERYTHING they serve there. Evidently a <a href="http://703dc9d8.miniurls.co/">Corny Dog</a> is a must have if you go. I searched different corny dog recipes online and picked the one that had the most praise. It's taken me a few days to gather my ingredients, but I finally got it all together today and went for it. It was So fun and easy! This would be great to do for a kids party or something. I threw some tater tots in the oven to go with them and it made a yummy, and easy ( unhealthy ) supper. I just feel like I should be sitting in a stadium seat, watching a baseball game. :o) Here's the recipe I used :<br />

1 heaping tsp baking powder<br />

<b>Method</b><br />
Mix the cornmeal and flour, baking powder, and salt. Beat the egg in the buttermilk and add to dry ingredients. Stir in 2 tbsp of oil or bacon drippings. pour batter into a tall glass or mason jar. Heat peanut oil in large pot or dutch oven to 365 degrees. Gently poke the sticks into the hot dogs about halfway. Put some flour on a plate and roll the hot dog in it to coat it ( this helps the batter stick ). Dip the hot dog into the batter then add to the oil. cook for 3 minutes, turning occasionally. Serve immediately. .<br />

I used to only wear dresses for meetings a couple times a week and that was it. Since easy breezy summer dresses have become a popular trend, they are everywhere! It is so easy to find a cute, comfortable, and modest dress now! I started off last summer with a skirt and now I would almost rather just wear a skirt or dress all day than shorts and a t-shirt. The reason for my new love of dresses : The summers of the SOUTH! SO STINKING HOT!!!!! A dress is so much cooler. You get that nice breeze :o) You just can't beat a cute summer dress that is wash and wear! I have been trying to build up a wardrobe of clothes that FIT anyway. I've lost about 30 lbs, but haven't bought a whole lot of clothes that are smaller. Especially dresses. So I am always on the lookout for a good deal on a cute dress. Today, I went to town to deposit some money and buy some milk.... well somehow I ended up finding another dress. :o) It's a bright blue maxi dress ( VERY similar to the one pictured ). I love the thing. It's so convenient to just whip it out and mop up a few footprints and be done. No mop or bucket or pouring liquids involved. If I had loads of cash stacked up, I wouldn't mind the cost of that convenience--- but I don't, so buying the disposable pads and the cleaning solution was getting old. I decided to do some looking online to see if anyone had any tips on a home -made/ cheaper way to do this. I did! I found a woman online who shared how she made her own reusable/washable cloths from rags. I bought a pack of microfiber ones at Freds for a couple of dollars. The first one I made just like she did. A normal rag happens to be the perfect size , so you don't have to do any measuring. I cut it in half. You have 2 pieces that are the same size as the swiffer bottom. I then basically sewed them up like a pillow case, putting the two outsides together and sewing around the edges. Leave a little hole, and turn right side out, then top stitch. Tada. I guess doing it this way maybe is a little more durable for washing and it's thicker. I sewed 2 strips of velcro on one side. I wish I wouldn't have now. --- Don't bother with the velcro! The microfiber sticks to the bottom just fine and without the velcro, you can flip it over and use the other side. So that was prototype # 1. It's good and is holding up in the wash. I have washed and dried it several times. NOW.... me being the lazy/ time saving person I am...heehee...... I decided to try to cut corners. #1- I cut my microfiber cloth in half. #2 I stuck it to the bottom of the swiffer and took off. That is working fine too. No sewing involved. It is way thinner and I figure it will fray over time. But so far it's good and it took way less time than sewing the pieces together and sewing the velcro on. I get two cloths out of one rag instead of one. Plus I can just flip it over and use the other side! So either way works. Will come back and comment on how the non-sewn one is holding up compared to the heavy duty sewn one. <br />

I LOVE THEM!!!! This is going to become a regular thing at my house now. It's so quick and each person can customize their pizza. I did a bbq chicken pineapple for me and a chicken supreme for Lee. Try it! I just cheated and used a great value pizza crust mix ( kinda like jiffy ) that was 76 cents or something. It made enough for two good personal sized pizzas. I heated up the grill ( charcoal for me ) and oiled the rack, threw that sucker on there and flipped it over in about 1 & 1/2 minutes. This trip was a little different than the others because we went down on Lee's motorcycle. Gary and Emily took his down too. We left friday afternoon around 3 or 4. We rode down to Monroeville, AL to spend the night. That happens to be the town with the famous ' To Kill A Mockingbird ' courthouse is. I didn't get to see it though. Saturday morning we were up early and after our continental breakfast, we headed out. We made it to the house before lunch, so we went ahead and arranged to get an early check-in. Dave, Emily, and Maci drove my car down saturday morning. They left really early so they made it down in time for us to all go eat Five Guys for lunch. That's always our first stop. The rest of the day we unpacked and all sat around on the 3rd story porch, we ordered pizza. Bruno's pizza is delicious! Brett and Lila arrived that evening so all visited for a while and headed to bed. The weather was great the whole week. We got lots of beach time in and some pool time. That pool is the most awesome pool ever. 12,000 square feet! One night we went down for about an hour before it closed. No one else was out there. IT's so pretty at night because they wrap all the towering palm trees with white lights. IT's just a real low glow of lighting. Our house also included a golf cart which provided many hilarious moments. One evening all of us girls decided to go for a spin through the neighborhood. ( it was pretty deserted . maybe 30% occupied at this time of the season , so not any traffic ) We rode all over the place and were joking that we were going to get in a high speed chase with the security guard, who also drives a golf cart. Well, we decided to try to see if a mysterious gate code on my check in paper would work on a gate at the back of the neighborhood, but it didn't, and guess who shows up just as we are turning to leave..... The security guard!!!! AAHHAHAHa! So EMily halls it back to the garage real fast and pulls it in and we shut the door and sit on the porch, like we were not the loud giggling golf cart riders. HAHA. One night the guys did some timed racing ( from one palm tree to another ) to see how fast it was. And on one of the last nights, they did get it to pop a wheelie....<br />

You could be up to your thighs in it and still clearly see your toenails. That also made it easy to spot fish in the water. One day me and Maci were out floating in about waist deep water and Mom and Melody ( a long time friend from Fl ) were about 15 -20 ft closer to the shore. A shark swam between us! It was about 3 ft long, not a big one. He just zoomed right by not interested in us. I was the only one that saw it as it passsed me and I told Maci," lets get outa here! " There was a man and his family standing on the beach who was waiting on us to get out of the water. He said " did you see that? It swam right between you!" They had been watching the big dark ' thing ' swim down the beach. Thanks for the warning man. We saw some dolphins a couple of different days. One day we went to St andrews state park, and there was a little school of tiny fish like penne pasta size. Well, I had a litte floaty mat thing I was floating on, and they decided they liked my shade. They stayed under me everywhere I went. My little groupies. Maybe they thought I was a boat.LOL! I was affraid they did and they liked to eat the stuff off the hull. I kept waiting for them to nibble on my legs..<br />
We ate some good food while there. OF course we had to go to schooners. It's beach front, has live bands ,and it's open air. They also have a drink that is the bomb called sunset splash. Yummy! We tried Pineapple Willy's and it's my new favorite. It's out on a long covered pier that goes way out over the beach. The food was good, and I loved the atmosphere. They have a signature drink, the pineapple willy, that is awesome too. We went to the big maze after dinner. That thing is entertaining. It will get you lost in seconds! As usual I was the last out. I think that was my 3rd or 4th time to do it too....haha. <br />

They took some pretty pictures with there bikes on the beach.<br />
Our last night we went to Hofbrau Beer Garden for dinner. It's a German place. it was interesting. I order herbed cheese, which is a huge chunk of cream cheese and some others that have herbs in them, and it comes with a HUGE fresh baked pretzel and mustard. Then we went across the street to Tootsies Orchid Lounge. The original Tootsies is in Nashville and is world famous. Many country singers started off singing there, and many country songs have been written inside the walls. They opened this one up a few years ago in Pier park. It was GREAT!!!!! The band was playing all the good stuff from Hank to Carrie underwood. So fun!<br />

We got power out there Tuesday. YAY! OF course they had to cut down a couple of big trees and now our privacy is kind of messed up, but those bushes and stuff should fill it back in during the summer. For right now you can see all the way out to the road. ( I hate the road.) Now we can set it up, tie it down, and build our porch and laundry room. The hard part now will be getting water and septic. I went to the Health Dept and picked up the paper work you have to do before the water dept can hook you up to water ( which is $500 ). It is RIDICULOUS what kind of hoops they want you to jump through now. On top of all the stuff you need before you ever get to the point of putting in septic, once you get your "recommendation" for what kind of septic, your septic installer has to call the environmentalist 2 days before the job to verify that he is installing the " recommended " system! AND you and the installer have to sign an affidavit and a maintenance plan and give to the Health dept before you are ' approved ' . WHAT???!! So.............we are going to dig a well. Me and Emily had been doing Pilates for several months. 3 times a week. It is great. Makes you more limber and did give some results. It was pretty much zero cardio though, so not much calorie burning. We had been thinking of doing P90X which is a really high energy cardio and strength training program. Then we saw Insanity. That is the perfect name for it. because it is CRAZY! It is hard core cardio with TONS of leg work, well pretty much constant leg work, and lots of plank exercises and pushups. It's supposedly the hardest workout program out there. I believe it! So why we decided to do it I don't know. We love pain i guess???? Emily's brother n law had it, so he sent us a copy. ( if you buy the real deal it's like $120 ) So we started about a month ago. It's a 2 month program. you do the first 4 weeks, then there's a 'recovery week ' , which I have looked ahead at the workout we'll be doing that week and it doesn't look like recovery to me! Then there's the last 4 weeks which is stepped up a notch and a little longer and harder workouts. The workouts we've been doing are around 40 minutes. I can really tell I have improved in my endurance. The first week I had to stop a Whole bunch to catch my breath, then the second a little less and this past week I've been able to hang in there with the big boys on the video pretty good. I started seeing a difference in my abs by the end of week 2. This week I can see that my arms/shoulders are changing. My legs have way more definition. So it's working. Tomorrow we start week # 4. Then after that we'll be on the downward slope! We've been taking pictures along the way, so MAYBE I will post them at the end if the results are good enough.
